One of my favorite vegetable dishes, is my green beans & red potatoes. I prepare the beans and let them cook for a few minutes before I add the potatoes, because I don’t like either one of them to get to soft. I monitor them while they cook to get the consistency that I want. You always want to cook the beans so they have a crunch to them to get the nutritional value from them that you need. To prepare: Wash potatoes and beans, separately. Place in medium size pot, add seasoning to taste(sea salt, black pepper, sprinkle with diced/flaked onions), cook between 15-20 minutes on medium heat.
